I recently purchased a 2021 Loar LH-700 arch top. I took it to my local luthier for a setup and 11g flatwound strings. Still loving the setup. Action is great. That said, I have noticed that, unless I fret the string exactly next to the fret, I don't get a clean sound. I've owned guitars that were much more forgiving. I'm wondering if a slightly taller fret wire would make things better. Does anyone have any suggestions?

The first thing I would try is raising the bridge saddle just a little, maybe 1/4 turn or less of the wheels at a time.
