Explain the rationale behind using a V7 chord in a minor key

The semester's started back up and i'm on track. I pretty much read everything I could then read my textbook some more until it finally made sense. Its all clear now, RyanM is right, I just have to use my ears for some of these concepts to really stick. But thanks for putting up with my frustrated posts.

The V7 and v min of the I chord.
i.e. G7 and Gmin in the key of C min.

I used to have a lot of trouble understanding minor keys.
When I was starting out, I was deep into theory and read everything I could find to learn more about harmony. But it was only when I got past that stage, and started applying a lot of these concepts did I really understand a lot of these things.
