My favorite minor blues is probably Wayne Shorter's "Footprints" although tbh I've heard so many uninspiring versions of it lately that it's beginning to feel a bit tired.
I (reluctantly) found myself at an open mic blues jam a few weeks ago, and one of the tunes called was Bill Withers' "Ain't No Sunshine". That's a pretty sweet minor blues tune that doesn't feel like it's been overplayed
...yet.
One of the bands I play in calls "Mo' Greens" by Booker T & The MGs on occasion, and that's a particularly odd minor blues -- the I, IV, and V chords are all minor -- that presents some fascinating opportunities to get out of your comfort zone without getting into your uncomfortable zone.
