I think the theme to 'Blue Bird' is one of the easiest Charlie Parker blues themes.
I've notated it as being this:

I'm not 100% on the chord changes, so let me know if I'm wrong?
(I use Musescore for the notation, the copy and paste seems to like using a lot of repeated accidentals.)

K.C. Blues is another easy one, it's the first Bird solo I transcribed - but phrasing is paramount with slower tunes like this, so it's not really so easy.

I've been playing 'Buzzy', another very easy Charlie Parker Jazz Blues theme.
I'm not 100% about every chord change, but obviously it's a Bb Jazz Blues.
I've notated 'Buzzy' as this below:

Basically, it's a simple memorable riff that changes only one note during the song, so it's an easy first song to play in a live situation for hobby players like myself.
Interestingly, the 7th note 'A' is played over a Bb7 chord, although it's on the off beats, then the riff repeats and ends with the b7 note 'Ab'.
(Edit: Genius Charlie Parker starts the riff by playing notes from a Bb Major scale over a Bb7 dom chord.)
An easy theme to sing and get into your head too.

"Blue Bird" is a cool tune. Can't recall hearing it before.
"Cool Blues" is another simple one, kind of like this, in that it repeats a simple phrase. ("Bag's Groove" is like that too.)
