What do you use? I only record solo chord melody and some fingerstyle acoustic. For the electric (GB10), I've been using the USB out of my Mackie Pro FX 6 into my laptop running Reaper. For the acoustics I use a Behringer UMC204 interface and either an Audio Technica AT2035 or a pair of little Behringer C2 condensers. I'm nor sure spending more $$$ would give me a markedly greater result. The Behringer stuff seems to punch quite a bit over it's price point but I'm open to suggestions.

My experience was spending a chunck did get me better results. I use a Universal Audio Apollo Twin interface and a Neumann TLM 49 condenser. I didn't like the results I got with budget gear.

Buy this book to understand recording better. The most expensive interface will not help you if you do not know exactly what you are doing.

For rigorous testing of interfaces Julian Krause's YouTube channel is a must. As I recall Behringer units tend to get excellent results in some areas but can have weaknesses, it all depends what matters for your use. But some units test fine in all areas in a $100-200 price range.

I'm very happy with my Solid State Logic 2+ and I see the price has come down. The dual headphone out is nice.
