Since spoken "C, D, E, G, B" may be difficult to distinguish on a noisy stage...
Fingers pointing up are sharps, so pointing up with just the index finger indicates one sharp, key of G.
Fingers down are flats, so key of F is one flat, one finger pointing down.
(Be sure to tuck your thumb so that doesn't mistakenly get counted as an accidental)
And key of C with no sharps or flats, the fingers just make the "C" shape.
Some may indicate minor by drawing a "dash" in the air immediately after the hand sign.
There are also some regional variations, so get to know what the locals prefer and use...
Someone may wonder what happens when you run out of fingers, but if someone is calling
a tune in six or seven sharps or flats someone is going to ask, "Are you kidding me?!"
