Kurt Wagner from Lambchop plays Archtops regularly. Usually amplified via a pickup, so I’m not sure if this counts. But here his sound is more of an acoustic one:

Dave Rawlings is a monster. Watch what he does with the capo about halfway through this song.

Just as impressive is that it sound like he's fingerpicking, but it's just a flat pick.
