Transcribing has been one of my main practice disciplines for years, and I've stuck to jazz solos almost exclusively. (Recent transcriptions include "I Should Care" Bill Evans (right hand only) and "Road Song" Pat Martino. )
I can hear the "dialect" of mainstream jazz soloing well to the point that I feel in a rut, transcription-wise. I'd like to transcribe some melodies from the classical repertoire or perhaps "world music" (African..... middle eastern maybe?) to shake up my ears. Can anyone point me to some transcribable stuff outside of the jazz repertoire?

It should really be up to you. Something that strikes your fancy and that you want to absorb into your playing. Not knowing you at all, I would recommend something by a musician from India (northern or southern) … great sounds … and there is an improvisatory tradition there, your ears might be challenged by the notes in the cracks.

Just leave the mainstream, transcribe players from other jazz styles, e.g., Steve Lacy or Andrew Hill. That will expand your improvisation horizons.

If you don't want to just go out and buy a score, why not try to tackle the probably most famous transcribed piece ?
