the reason parts manufacturers wont do one pickup guitars —> they make the bodies using CNC machines, and secure the slab of wood in the machine with 2 wood screws. The 2 pickup cavities then are necessary to get rid of the screw holes. Making a one pickup body you;d need one off handwork from a luthier
