Warm jazz tone with flat tops?

A flat top with flat wounds and a Fishman Rare Earth sounds pretty smokey

I have always been impressed with the warm sound of Taylors, especially the cutaway models like 614CE, etc. I don't know if it's bracing or strings, but it has a softer sound that's very unlike a Martin or other flattops. I could easily see playing jazz on a cutaway Taylor.
