Hi,
I'm in shock. Just broke the knob on my Gibson L-5 with a BJB floating PU, similar to this: Gibson Custom Lee Ritenour L-5 - Sunburst | Sweetwater
I think the whole potentiometer needs to be changed. Can that be done on a pick guard like this?

Very easily rest assured.

Knobs are easy to change. Potentiometers are more involved, but not difficult if you have some soldering skills. If no skill and no equipment, it shouldn't be an expensive job for a tech to do. As Sam said, what makes you believe that the pot is bad? No need for panic yet, or even later.

Easy fix , but if you want the exact same pot and knob it may akin to trying to source an original rubber switch grommet for an ES-175

just the plastic knob? That's easily replaced without replacing the potentiometer.
