I've never seen action at 1 mm (or less) on any guitar. 1.5 on the high E and 1.6 on the low E are kind of the limit in my opinion.
Lower, you don't hear the guitar, just the strings and frets.

Its not that hard to get a good solid body to 1mm or close. I can get close with my archtop but it sound like crap. It doesnt buzz, it just sounds all wrong. Maybe it would sound good if I ran it through a fuzz box

The neck issue is a positive one in my book. It suggests a shallow neck angle which for me is preferable in playability. Much easier to over come than the opposite. Most guitars can benefit from some fret leveling. Since it plays well I'd say you did ok.

Regarding the bridge, there is a GraphTech low profile archtop bridge that will go lower. In fact, I have one that I am not using that I could sell you if you wanted to try it out as long as you’re in the US.

Such low action prevents picking dynamics severely, but most rock guitarists use effects and distortion to simulate dynamics.
My solidbodies and my archtops are all set up the same way. The key things are (1) nut cut properly which is almost never the case as delivered new; (2) relief set at .010" for my tastes; (3) action at the 12th fret at 4/64" (I prefer this for all strings). Everyone has a preferred setup, this has worked well for me for 40+ years. The importance of nut setup cannot be overestimated and to me is one of the most important aspects of playability.
