How are the jazz iii's (ii's and i's) nylon? I have the jazz i's (which is 1mm) and the big stubby nylon which is also 1mm, and they feel nothing a like. The red jazz i's feel stiffer and more pronounced where as the big stubby nylon feels like every other nylon pick (super bendable). The reason why I'm asking is because I'm going to be working on a project where I make nail clip inserts (kind of like the ping pong ball idea) but out of acrylics, nylon, and other materials of my liking - and I don't want to end up getting the wrong nylon sheets for my nail tone production.

There is a noticeable difference in material between variants of a jazz III pick, even if they are same model. Check this list. The product is "Dunlop Max Grip Jazz III" and the options are pack size and material.
I found myself with 2 same picks but very different in material and sound, one was nylon enough but the other one wasn't. I reviewed my order history and I figured out that I ordered different picks each time.

There are several different formulations of nylon, and they differ greatly in physical properties. Here's a summary sheet about this, and here's a sheet with more detail about 5 commonly used types. I've never been able to find any information on the specific nylons used in various guitar picks, but I've had many "nylon" picks over the years and they're clearly not all made of the same material.

You'll need something rather flexible to go under (or over) nails, because most nails are curved around, not straight. I don't know about yours, but it's something to consider. I have no idea what sheets may be made of, nor the exact composition. I suspect you'll just have to try some and see what you get. There are probably multiple reasons why this isn't often done.

I think the Delrin ones like the Dunlop Primetones 2.0mm produce a nice tone.
