I am driving up the East Coast from Florida to Vermont. I convinced my wife that it was a good idea to stop along the way and check out guitars. So far I have:
- Benedetto in Savanah
- Dream Guitars in Ashville
- Tim Bram in Maryland
- 1 from Reverb in NJ
- Guitars Jazz in NJ
- A store in Rochester NY

For great vintage gear, altho not specifically aimed at jazzers, you have to stop by Lark St Music in NJ; owned and operated by Duke Levine's brother, Buzzy. The most vintage gear I've seen in one shop anywhere in the NE. Original tweeds, oddities, it's a really cool little shop.

Too bad PRS guitars is not giving tours. If you're going up I-95 you won't be far from them. Although, avoiding DC and Baltimore is something to consider.
But the Martin tour appears to be ongoing.

If you're looking for D'Angelicos and D'Aquistos then there is no better place than Rudy's. Rudy has two stores in NY, one downtown Manhattan and a second store that he opened a few years ago in Scarsdale.

48th street in Manhattan has a lot of shops including Rudy's.

I get it and wasn't suggesting a pilgrimage to Rudy's so you can blow the retirement savings or take a second on a house; just thought it might be fun to play with Rudy's toys before browsing the more affordable options that he has for sale. Judging by all the suggestions others provided this is shaping up to be quite the trek; Enjoy.
