I use the large jazz Blue Chips, 35 for solid bodies, 40 for electric arch tops and 40 or 50 for acoustic flat and arch tops.

I find the thicknesses affect the sound quite a bit.

The one thing I don’t like to do very much is change shapes. I find that to be a tougher adjustment than pick thickness.
