And, the Kharash is very nice too. Do the flamenco guitars sometimes have a scratch plate to protect the wood from the sometimes aggressive and percussive techniques? In one of the videos above it looked like maybe the guitar did possess one.

Yes. Both the Kharash flamenco blanca and my Gonzalez flamenco negra in the videos have golpeadores, clear plates that protect from golpe (flamenco technique of tapping on the top) and other techniques like rasgueado, etc.
