I’m thinking that these specs might be perfect for me, all of my other guitars are 16” and I like the 17x3 size, but I’d also like a single set in pickup and a 24.75” scale. Looking for a very electric sounding guitar
what are some models I should be looking at?

Roger Borys B120 Deluxe 17" Custom that Tony DeCaprio plays.

Peerless Monarch. 17x3", 24.75 scale, and you can get it with set in pickup.
Solid wood, formed not carved. I have the same guitar with the floater, kinda wish I'd gotten what you want. Mine was not exorbitantly priced at all and I've never once had to do anything to the set up. Fret work was perfect, looks stunning, plays well, sounds great.

Depends on your budget, but Stephan Holst can custom make one for around $3.5k. There a re a bunch in the longer scale, but not as many 17"×3" laminate 24&3/4" scale.

+100 on Holst!

Stephen Holst only does laminates up to 16" (I inquired about this matter some time ago). To get a 17" from Stephen, it would have to be carved and would cost around $5000.

If you can abide 16.5" Ned Whittemore is worth a looksee:

in foresight unbeknownst to me I had Victor Baker make me a 17"/2,5" lam-top guitar some 9 years ago - couldn't afford one now that his prices have gone up considerably. I'd look at the Sadowsky l-17 (?) that Russell Malone plays, Chuck Loeb did also, RIP ....

Companies from whom you could custom order one of their 17" laminated archtops, with 3" rims, a short scale neck and the pickup of your choice:

If It could handle 17, It would hace to be a Guild X.
One pickup examples exist.

Various one-pickup 17" old Guilds are out there. Or you could go with a Guild X-150.
Not quite what you want, but this one is close, I think.

Or a new one. Just get a full-sized humbucker installed in the top.
