I will toss out a couple of "good ones" - maybe not the best ones out there and perhaps not my favorites if I were to dig through my thousands of jazz records on vinyl or CD, but interesting nonetheless... and well worth pulling out of the stack.
Paul Chambers - Bass On Top
Like the title says, it is bass on top. For me one of the better bass-led jazz albums ever produced. Kenny Burrell plays a great guitar on this album.
Bill Frisell - With David Holland and Elvin Jones
An interesting exploration into instrumental guitar jazz. I also like Good Dog Happy Man.
As for a third, I am partial to The Incredible Jazz Guitar of Wes Montgomery but that is kind of a jazz guitar staple.

Listening to Bill Frisell's Live in Seattle now. Bill's the dude (that's why I have almost everything he has done).

For me, Wes's "Smokin' At the Half Note" was the record that made me think jazz guitar was something worth pursuing. (Before, I liked jazz but didn't care the sound of most jazz guitar I heard, so I didn't try to play any of it.)
Kenny Burrell's "Midnight Blue" is epic in a whole 'nother vein.
The sides Charlie Christian cut with the Benny Goodman Sextet---which I only heard after I heard Wes and Kenny---is my 'ground zero for jazz guitar.'

It'' hard to limit myself to three, or even express this in terms of records. It's more a matter of who are the players you have to check out, and which records represent them well. With that in mind, here are three more:

I'll add four that influenced me the first time I heard them. Except for "Live at the Half Note" I bought these LPs new when they first came out. I bought Live at the Half Note after I read about Pat Martino's influences. These are still favorites today.

Hank Garland: "Jazz Winds from a New Direction". One of the most convincing bop guitarists, IMO. Also interesting to listen to the 17-yr. old (!) Gary Burton on this recording.
