The fretboard on my Ibanez AF95 (made in 2021) is macassar ebony w/ ivory binding.

What's the ivory binding? Modifies the tonality in some way?

There is no ivory used for anything, not for many years. It's ivory colored, sort of, and made to look like ivory. It's paper in composite. The binding is mostly decoration, especially on guitar necks.

“Real” ivoroid is either cellulose acetate or cellulose nitrate, depending on how it’s made. Plant fibers (usually wood or cotton) are dissolved in either acetic or nitric acid, with various additives used to make it workable so it can be molded, extruded etc. Coloring agents are added to make it look like other stuff (tortoise shell, MoP etc). It’s the same composition as the celluloid used for picks.

I've used something sold as ivoroid, real or not, as knife handles for decades. It's laminated composite and paper, and the laminations give it the appearance (sort of) of ivory. There are many combinations of materials available, including wood, cloth, and whatever. The materials are very thin, but some, especially the cloth, can be seen as the material is worked in shape. I assume there are many variations on this theme, including just color or dissolved materials, depending on the desired use and physical characteristics. But the bottom line, I think, is that ivory has been illegal for any use for decades, and subject to seizure and fines if found on something where the provenance cannot be proven. In short, it is not ivory, but some form of man-made material.
