Anyone have experience with the AT ES350 model and can they be ordered with different pickup configurations?

Well they no longer make them so No.

I am in contact with Masaki from Walkin, and a new lot of the Archtop Tribute Custom 350 (ATC350CC) with Charlie Christian pickups will be available in June. I wanted to buy that guitar, but changed my mind and placed an order for their version of ES-150 (ATC150CC).
They also have a non Custom Version of the ES-350 with humbuckers, but I do not know if it is available.

Have a look at Bruce Forman's Instagram channel. He has a red (custom color?) AT 350 and posts almost every day. Probably an excellent guitar.
