Some names from the UK scene:
Ross Stanley (who is EVERYWHERE!)
Pete Whittaker
Mike Gorman (busy jazz and session player, long-time member of Jim Mullen's working trio).
Sam Leak (primarily a pianist but plays great organ)
-
Don Patterson with Pat Martino.

-
Don Patterson (with Sonny Stitt and Grant Green), from Brothers-4:
With Booker Ervin (amazing bassline):
Always liked Patterson's mad genius/ carnival calliope vibe.

My two favorites are old school--"The Sermon" and "Back at the Chicken Shack" by Jimmy Smith. Each features Kenny Burrell on guitar, of course.
These albums really got the B3 Organ Trio industry going in the first place, it seems to me.

^ Jimmy Smith and Kenny Burrell is my all time favorite combo.
