Do good players not double time these tempos? Seems like most do in order to swing well. Or by double time I mean introduce 16th notes (or faster) to tempos slower than ones that will swing with only 8th notes and 8th note triplets.

Sure they double time those tempos but hopefully not in order to swing well. Hopefully they can swing with eighth notes and the double time is a choice to give some variety.

if you’re playing a walking ballad at 75bpm then the double just swings like anything else would. If you’re playing a nice medium swing at 120 then your eighth notes can smooth out a little and it’s easier to sit in the pocket

Right. To me it sounds like it pops off better tho when the full range of rhythms are used, and not just smoldering along with 8th notes in a slow med tempo even if they're swinging as much as possible.
