Fly Me To The Moon -- go-to chord sub methods?

Hello again!

I've been experimenting with borrowing from IIIb (I'm sure there's a fancy term for it!). Hopefully I will be able to add that to my small toolbox of chord subs, which currently includes the dom7 chords connected across dim scales and tritone subs. I am also intrigued by this whole "mediant" thing, but not sure I quite get it...

What are your go-to methods for subbing chords?
