First that popped into my head, another great outing by them.

Jim Hall and Bob Brookmeyer at the North Sea jazz festival is a favorite.

Bucky and Stef.
And while it's not an entire, stand-alone album, there's the Bucky-George Barnes set from The Guitar Album Town Hall concert.
I'll second the Bucky-Scott Hamilton Red Door album, and I'm looking for Bucky's live sessions with Zoot Sims (there are two I can find listed).

It would be cool if people specified if the albums they are recommending were 2 guitar albums, or guitar + other...
For some reason, I really don't like 2 guitars. I never have. An impromptu jam, sure. But for an album, I'd much rather hear a different instrument with the guitar.

This one is unique: Joe Pass and J. J. Johnson, Guitar+Trombone! The album is We'll Be Together Again
-
These two made a few duo albums.
-
Joe Pass also did a duo album with Zoot Sims on tenor.
Guitar and bass:
Jim Hall, Basses
Frisell with Thomas Morgan
Pat Metheny and Charlie Haden
