I highly recommend NI Guitar Rig. If you don't care so much for the amp models, you can for sure use the gate feature, reverb, delay, eq etc.
There is a 'Jazz Amp' in Guitar Rig, which is a digital recreation of the Roland Jazz Chorus. I never use the chorus on there, but you may like the amp itself, the eq, mic positioning, and dry/wet(stereo) effect.

PS...if you are looking for more than just clean Jazz, then i DEFINITELY recommend this program. I own a real Orange amp, and I must say that the 'Citrus' recreation is not shabby at all!
The psychdelay is sweet for fusion/rock/experimental. I'm not quite sure what the exact algorithm is, but the delay on there is different from anything else I have tried(including my Boss pedal/looper). I prefer a clean delay for the most part, but i actually wished they made a digital pedal with the psychdelay algorithm.
The rotary effect is awesome too...don't be surprised when your guitar sounds like an organ.

I tried Amplitube once and really disliked it, Guitar Rig is my favorite when it comes to modelling and effects, and I use it on anything(literally)
for example, ill layer two drum tracks, one playing through a guitar amp for example...and blend it with the clean signal for more depth.

EDIT: for bass guitar, guitar rig is NOT even half as useful. Besides the effects, it doesn't have useful amp models or anything. In fact, if you must use it for bass, the guitar amps are superior to the ONE bass amp model that is included (imo)
Finally...if Guitar Rig doesn't seem too great, it could be the quality of your direct input. IF you are using an adapter, sounds like you aren't using a standard 24bit 96khz card. Nowadays you should be able to get one from M-audio for $100 or less.
