Default Correct versions of Ella Fitzgerald Songs?

I have noticed this a lot with books where none of the songs will
be in the correct keys that are on the albums! what is up with that?

Example

I am looking for a Ella Fitgerald Book that lists the chords and so on
PVG OR PV and came across this review of this book,

"Although this book is filled with great songs , they are not in the keys that Ella used. For example, My funny Valentine is in C minor and Ella sang it is G minor. Bewtiched is in C major but Ella sang it in F. Bottom line Ella would have sounded like a chicken being murdered in these keys so how do you think you will sound? If you are an opera singer like Kiri Te Kanawa you will sound very nice in these high keys , but not very jazzy. The keys could be appropriate for a high voiced male jazz singer, so such singers might want to take a look . If you are an amazing pianist and can transpose on sight I guess it will not bother you to read from this book , but then again most of these songs must be in the real book."

I notice this with a lot of books. are there any correct versions out there
in and or out of print?

Default Correct keys

The sheets you found are the 'correct' (original) keys for the tunes. Ella and her band(s) transposed them into keys that worked for her voice. Search on 'transposing keys" here or just anywhere online and you'll find information/tools on how to do this. It's great exercise and if you plan to play with singers, it will serve you very well. Hope this helps!
