Seriously, I like having either a 1x12 combo and an extension cab if I need it (another speaker does change the sound!), or a head with two extension cabs (again, if I need both). I like the sound with both speakers, but for smaller gigs it's just not necessary. This is a more versatile rig than a 2x12 combo.
And yes, tubes rule!

A tube head and a 12" cab is ideal and easy to haul... put an extra cab in the car just in case. |

I still have to use it at a gig but at home the sound is HUGE, fills the room better than my other 1x12 cab. |

| | the only reason these days to use the larger cab is for better on-stage spread. if you're using your amp as a monitor, or the guitars are coming hot off the stage, then a 2x12 will provide you (and your audience) with a wider distribution of sound, where a 1x12 will be more directional. it doesn't matter if you're micing the amp.

Is the 2x12 distinctly louder with the same amp & guitar volume settings or does it just sound, well... fuller, huger, in other words: better? |

Yes if you are miced ansd have stage monitors you could take a 1 watt amp! But a lot of times I played miced gigs but without monitors so I am hoping the 2x12 will fill the stage better... To the audience will be irrelevant probably. |
