Well I have an Epiphone Sheraton 2 made in 2004 in Korea.
I find it very comfortable to play, I find i get a nice jazz tone with the stock
pickups.

Here's a sound sample from when I was testing my recording setup.

hmm usually the guitar sound much more thicker and creamier through my cube compared to this recording.

I might keep that one stock...hmm we will see.
Regarding that Joe Pass specifically, its the one that gets played the most if it tells something.
These affordable guitars are not only fun to play, but also fun to cusomize provided you don't endup putting too much money in them if you plan to sell...
I kept my Sheraton stock and I feel that I can get a nice thick tone from it.
All I do say is though is to put some flatwound 13s on it.
It made a world of difference when I placed the xl chromes from the nasty 9s that where on it before.

I might try Thomastik flatwound 13s on the next re-string due to the reviews on this forum.

I'll be putting these on my JP next string change. I can't complain about the chrome 12s on it now.
