>> does anyone know what screw size and length are used to attach a tail piece to the ES 175?
I have seen #4 X 3/4" at the low end of size and #6 X 1" at the high end (except for the odd wacky replacement)
I do not know off the top of my head what is currently used on new stock.
Use a round-head sheet metal screw (full thread) vs. a wood screw (partial thread).
>>> do the 3 screws simply pass through the bracket and thread into the wood?
Yes. Plus the strap button screw (#6 or sometimes a fat #8) also passes through to the wooden tailblock.
>>> does anyone have a photo of what it all looks like?
Tons of pics online. Google.
Note that you will likely want to trap a ground wire under the tailpiece as well.
It might help to describe what exactly you are doing - new tailpiece on old guitar? Something else?
>>> where can I find the proper parts?
The screws can be a minor pain to get trough the usual suppliers (but give Allparts and Guitar Parts Resource a call anyway). If you want chrome (as typical on a 175) then hit Home Despot.
For a new install, #4 X 3/4" or #4 X 1" sheet metal screws (zinc or otherwise plated) will be fine. For an old replacement, consider a #6 screw for stripped out holes.
Note that the strap button screw also contributes to the tailpiece mount strength, but in practice the three #4 screws will be fine.
But this is ALL conjectural without a clear description as to exactly what is it you are doing.
