Play what you like, create your own book and style, or you'll just be another generic jazz group, ignored and broke. Most "standards" recommended here were old tunes when your grandparents were young. Try to find some tunes more relevant to the 21st century. As an experimental project, for instance, select a half dozen tunes written after 1959, from Beatles to Mancini to Motown to Jobim, and arrange them for your trio. I guarantee you'll get a great reaction from any crowd, and have a lot more younger listeners than most of us playing music from the 30s and 40s.

Challenge yourself by listening to trios that are NOT guitar trios. You will get plenty of guitar in this thread I'm sure, but take a little time to be aware of what Keith Jarrett did with standards. Listen to Fred Hersch's trios. Brad Mehldau is working with contemporary songs as ronjazz suggests in the previous post. Lee Konitz groups, Stan getz and groups with Paul Desmond can give you some very good ideas about small group dynamics, and yes of course Bill Evans. Give it a try, and have fun.
