Default Fingers too stiff?

I am learning Fly Me to the Moon from Matt Warnock site:

Everything was ok until 25. line on Eb6 chord:

That voicing, reading from the bass E, gives you Eb, G, Bb, C (or Root, 3rd, 5th, 6th). How about omitting the 5th, and voicing it R,3,6 ?

If you simply must have that 5th, why not put that on the 6th string

I tried different root strings, to keep note order, but didn't think about changing note order...

Yeah, if I strech my fingers to that original shape, it looks ridiculous

try classical position.

since it's a chord melody, is that C on top the melody note? You might consider leaving out the Eb on the bottom and keeping the melody note and the close voiced supporting tones...my guess is you probably could pull off that stretch, especially if you tried it in classical position.

Problem solving what to keep and what to omit or how to reorder is just a fact of life for guitar.

Try the stretchy chord up an octave if you have a cutaway or just high up the neck if you don't.
Can you play it there? Move down one fret at a time until it becomes unplayable.
Some challenging chords are playable within limited range up the neck or will become playable with practice and time and others we will never play.

When I can't play a given voicing I will break it into fragments.
1+3
2+2
3+1
lower 2/middle 2/top 2/
1+1+1+1
etc.

But to get through this song do whatever works.
